Wok On The Wild Side
With so many ingredients to be stirred in to the cooking wok in quick succession for this batch of Cheng Du Ji, it helps to have them all lined up! The piece of chicken fat represents the 2 lbs of chopped chicken on the cutting board over there. And no, the shotglass is not for the cook! Sorry.
